Cheaper matcha turns a latte dull and bitter. Ceremonial grade costs more, but it means we never have to hide the taste under syrup.
How to tell
Good matcha is a bright, almost electric green, smells sweet and grassy, and whisks into a fine foam with no lumps. Dull or yellow powder is usually older or lower grade.
